Recipe: Mashed Potato Casserole

Gina came over for dinner, and she requested a childhood favorite dish: mashed potato casserole.  Her mom used gravy and green beans in her recipe, but I altered it a bit for what I had in the cupboards.  Here is my version.

6-8 medium potatoes
3 oz butter
1lb ground beef, browned
1 white onion, chopped, sautéd in the fat from the beef
1 can corn, drained
6 oz shredded sharp cheddar cheese

Peel the potatoes and cut into small chunks.  Boil until soft, beat with the butter until smooth.  Mix the onions and beef together.  Spread the potatoes in a greased 9x13 casserole dish, then layer with the beef and onion mixture, corn, and cheese.  Bake in a preheated love at 325 for about 25 minutes, until the cheese is melted and the casserole is hot.  Serve immediately and enjoy!

You can alter the recipe with half sausage/half beef, or switch the corn with green beans, or use a different cheese.  It has a lot of different options, and it's great comfort food!
